Call me boring, but I am the type of person that doesn't need much variety for my lunches. Really I'm just looking for substance and convenience. Something that will only take me a few minutes to prepare in the morning so I can get on with my day. I will also admit most of the time I buy a weeks worth of lean cuisine or smart ones and that's my lunch. After thinking about it, for a 5 day work week, buying a smart one for each day would cost me roughly $10.50. I felt like I could do better with my money by making something that's just as easy to take and by far better tasting (not that there is anything wrong with frozen meals). So for around $6 (including the bread) I was able to make enough of this awesome Cajun Ham Salad to get me through the week. If you're looking to spice up your lunch...literally...be sure to give this a try! Don't like the heat?? Just take out the sriracha and cayenne pepper and try something else...be creative!

Ahhhhh Sriracha...the best freaking condiment on the planet. I seriously would put this stuff on practically anything. I especially love it in eggs, just a little squirt in your scrambled eggs to get your day going. I was always interested in making this stuff myself, but it has always proven to be difficult to get my hands on Fresno Chilis (red jalapenos) in Pennsylvania. But, to my luck, when I went to Wegmans the other day, lo and behold they had a big basket full of them. Naturally, I stocked up and was quite excited to try to make my beloved chili sauce. After perusing some of the recipes online, I finally settled on one, even though most of them were pretty consistent. Have to admit, it is even better than the store bought. The flavor is spot on classic sriracha, has a really nice heat and a really great consistency. It is a little more runny than store bought sriracha, but not to the point where it was a problem. I would be curious about adding some ultra-tex 3 to give it a little more body. I'm also curious to maybe try it with jalapenos since those are a billion times easier to obtain...a green sriracha?? Maybe next time, right now I'm just going to enjoy this bottle.

At one point in my life I felt like I was making these things every week. Literally making thousands of Pepperoni Rolls throughout the year. I feel like this was one of my first culinary "creations", even though they are quite simple. But, people scarf them down like nobodies business. I don't make them as much as I used to, but when I do, they are still a huge hit. The best part?? You can make 40 of these yummy little treats for only $5 and it only takes about a half hour. With Memorial Day parties right around the corner, if you are still looking for appetizers, you have come to the right place. Your guests will be sure to love them! Be careful...they are addictive.
